Potato Cafreal
Ingredients
6 Medium Sized Potatoes, Cut into Medium Pieces
3 Medium Sized Onions, Cut into Semicircles
Coconut Oil as required
Salt as per taste
3/4 Bowl of Cafreal Masala
Water as per requirement

Serves 6 / 45 Minutes
Preparation
1. Heat a non stick vessel with 5 tablespoons of coconut oil.
2. Once the oil is hot, add the chopped onions. As the onions turn transluscent, add the potatoes.
3. Stir Fry until the potatoes and onions are well fried. Close the lid for 5 minutes and cook so that the onion flavour seeps through the potatoes.
4. Now add the cafreal masala and stir fry for 5 minutes.
5. Next close the lid and allow the masala to cook along with the potatoes. If the masala is dry add around 1/2 cup of water so that the masala and potatoes cook well.
6. Check if potatoes are cooked by porking a fork. If ready, keep the cooking lid open and thicken the gravy based on the consistency that you desire.
7. I have made a semi dry potato cafreal and added some more coconut oil at the end and allowed to fry a little more before turning off the flame. Once ready serve hot with rice or rotis.
