Eggplant Sweet Potato Pie

Ingredients

1 Medium sized Eggplant
Handful of garlic, finely chopped
1 Medium Sized Onion, finely chopped
1 Medium sized Tomato, finely chopped
Tomato Puree, as required
4 Sweet potatoes, boiled and mashed
Olive Oil, as required
Salt as per taste
Oregano and Pepper for seasoning
Some Cheese for the top layer

Serves 6 / 45 minutes

Preparation

1. Roast the brinjal directly over a medium flame until the outer cover is completely roasted and the inner brinjal is nice and soft.

2. Once the brinjal or eggplant has cooled. Take off the outer skin and cut off the top stalk. Mash the inner white part of the brinjal into a seperate bowl.

3. Take a pan, add oil, heat the oil, add some garlic, once the aroma sets in add the chopped onions. Finally add the mashed eggplant. Mix well on a low flame, add some finely chopped tomato along with puree. Cook until mushy. Add salt for taste. Add oregano and pepper along with some olives

4. Heat oil in a pan along with finely chopped garlic. Add this to mashed sweet potatoes along with pepper and oregano.

5. Now spread this mashed sweet potatoes mixture onto a round baking pan at the bottom. Above it spread the eggplant mixture along with some scrapped cheese.

6. Add the tray to the oven at 120 degrees Celsius for 5 minutes until the chese melts. Enjoy the pie.
