Spaghetti Pasta with Spinach, Corn and Mutton cubes

Ingredients

250 gms Spaghetti Pasta
2 Bunches Spinach, Finely Chopped
Some Corn Kernels
100 gms Mutton Cubes
1 Medium sized Onion, finely chopped
4 Medium sized Tomatoes
150 gms Tomato Puree
20 Cloves of Garlic, finely chopped
1/2 Teaspoon Thyme
1/2 Teaspoon Oregano
1 Tablespoon Ginger Powder
Salt for taste
Olive oil as required
Some Olives and Mozzarella Cheese for decoration

Servings / Time

Serves 4 / 1 hour

Preparation

1. Boil Pasta in water with closed lid, add oil while boiling such that it does not stick. Once ready strain the water and let cool.

2. As the pasta boils, add oil to a pan, add the finely chopped onions, ginger and garlic, saute for a few minutes. Add tomatoes, cook until mushy. Add tomato puree, then add finely chopped spinach and corn kernel, let cook until the spinach leaves out water. Once the gravy is thick turn off the flame. Fry the mushroom cubes separately in a pan, let cool once ready.
3. Add the above tomato gravy and fried mutton cubes to the pasta and mix well. Add more olive oil if needed.

4. Decorate with olives and grated cheese.
