Carrot Cake

Ingredients

4 Medium Sized Carrots, Peel off the skin and scrape 
250 gms All Purpose Flour 
150 gms Sugar 
3/4th Cup Of Oil 
4 Eggs 
1 Tsp Baking Powder 
1 Tsp Baking Soda 
Rind of 2 Lemons 
1 Tbsp Lime Juice 
Medium Sized Square Baking Tin 
Butter Paper

Serves 12 / 1 Hour

Preparation

1. In a bowl mix the flour along with baking powder and baking soda. 

2. Use a mixer grinder to mix eggs, sugar, carrot, lime juice and lime rind. 

3. Now add the bowl of flour and oil in batches to the above mixture of eggs, sugar, carrot, lime juice and rind into a bowl. 

4. Once the batter is ready, add butter paper to a baking tin, then add the batter. 

5. Preheat oven at 130 degrees centigrade. Add the baking tin to the oven and bake for 90 minutes. 

6. Once ready,let the cake cool down and serve slices.
