Sweet Mango Chutney
Ingredients
1 Kg Poly mangoes, cut into fine cubes
1 Kg Sugar
50 gms garlic
50 gms ginger
50 gms dried red chillies
1 Cup Vinegar
50 gms Raisins
1 Kg Sugar

1 Large Jar / 1 hour
Preparation
1. Skin the poly mangoes and cut into fine cubes, add sugar to the cut poly mangoes and keep aside until the sugar melts. Simultaneously prepare a paste of ginger, garlic and red chillies by adding to a mixer along with sufficient amount of vinegar. See that you cut off the stock of the chilli.
2. Now add the vessel containing the mangoes and sugar on to a low flame, stir continuously so that the sugar does not burn, cook until the mangoes turn golden yellow.
3. Now add the paste to the mixture of the mangoes and sugar along with the raisins. Stir well.
4. Cook until it thickens. Once it bubbles up turn off the flame.
5. Let cool and fill in nice dry glass jars.
