Lator (Simple Jackfruit Cake with Rice)
Ingredients

2 Cups Jackfruit Pulp
1 Cup Uncooked Rice
1 Cup Grated Coconut
Coconut Oil or Butter for Greasing the Baking Tin
6.5 X 2 Inch Round Baking Tin
A Pinch of Salt

12 Servings / 1 Hour

Preparation

1. Soak the uncooked rice for 1 hour in water. Now rinse the water and Grind the rice and grated coconut in a grinder along with the jackfruit pulp in batches to form a nice thick cake batter.

3. Add a pinch of salt to the batter and mix well. I have not added sugar since the jackfruit has its own natural sugars to give the sweet taste.

4. Now preheat the oven at 150 degrees Celsius, grease the baking tin with coconut oil. Add the batter into the tin.

5. Place the baking tin into an oven for about 30 minutes or until the toothpick comes out clean.

6. Once ready, allow to cool and then serve thick slices.
