Farfalle Pasta in White Mushroom Sauce

Ingredients

2 Cups of Pasta
2 Cups Milk
2 Tbsps Flour
15 Mushrooms, Cut into halves
2 Onions, sliced into rings
20 cloves of garlic
1/4th inch ginger, finely chopped
1 Tomato, cut into cubes
1 Potato, Boiled and cubed
1 apple, cubed
Handful of Green Olives, sliced
Corriander Leaves, Finely Chopped
2 Tbsps Lime Juice
Salt to taste
Oregano, Thyme, Pepper Powder for seasoning

Serves 5 / 1 Hour

Preparation

1. Boil Pasta in water with a closed lid, add oil and salt while boiling such that it does not stick. Once ready drain the water and let cool.

2. Now in a bowl, mix cubes of chopped tomato, potato, apple, coriander leaves and pasta, add lime juice along with oregano, thyme and pepper powder and mix well. Add some more olive oil and salt as per taste.

3. For the mushroom sauce, heat some oil in a vessel, add finely chopped ginger and garlic, then add onions, cook until onions turn translucent.

4. Now add mushrooms, stir fry for few minutes.

5. Add milk, let the mushrooms cook in the milk so that the juice from the mushrooms blends into the milk.

6. Once the milk has boiled and mushrooms cooked, add the flour so as to thicken the sauce.

7. Stir well so that no lumps are formed. Once ready turn off the flame, let cool.

8. Now mix the white mushroom sauce with the pasta. Serve hot.
