Spaghetti Pasta with Mushroom in Tomato Chilli Sauce
Ingredients
200 gms Spaghetti Pasta
20 Mushrooms, Chopped into halves
1 Medium sized Onion, finely chopped
6 Medium sized Tomatoes
3 Dried Red Chillies
8 Cloves of Garlic, Crushed
1/2 Teaspoon Thyme
1/2 Teaspoon Oregano
1 Teaspoon Turmeric Powder
1 Tablespoon Ginger Powder
Salt for taste
Olive oil as required
Some Olives and Mozzarella Cheese for decoration

Servings / Time
Serves 4 / 1 hour
Preparation
1. Boil Pasta in water with closed lid, add oil while boiling such that it does not stick. Once ready strain the water and let cool.
2. As the pasta boils, add oil to a pan, add the finely chopped onions and crushed garlic, saute for a few minutes, then add mushrooms along with thyme and oregano, stir fry for a few minutes, close the lid and let cook for a few minutes. Then add the sauce and cook for while with closed lid. Preparation of the sauce is in the next step.
3. For the sauce, boil 6 tomatoes until soft. Let cool, peel add to mixer along with dried red chillies, ginger powder, turmeric powder and salt to form a thick puree.
4. Once the mushrooms mixture is ready add to the pasta and mix well. Add more olive oil if needed.
5. Decorate with olives and cheese.
