Ingredients

50 Bimbli
2 Tbsps Salt
1 Tbsp Mustard Seeds
25 Dried Red Chillies
1 Tbsp Cumin Seeds
1 Tbsp Coriander Seeds
3/4 th Tbsp Fenugreek Seeds
100 ml Vinegar
180 ml Oil
1 Tbsp Sugar
5 gms Asafoetida
1 Tbsp Turmeric powder

Servings / Time

2 Medium Sized Bottles / 1 hour

Preparation

Bimbli Pickle - Bimblis
1. Wash and clean the bimbli and cut into long thick strips.

2. Add salt to the cut bimblis and keep aside.

3. Powder 18 chillies on a grinder.

4. Dry roast 7 chillies,mustard, cumin, coriander and fenugreek on a pan separately each by adding little oil 1 tbsp. Mustard seeds and cumin seeds need to clutter when roasted. Once ready let cool.

5. Now grind the powdered chillies along with roasted ingredients and vinegar. Also add turmeric and asafoetida to this mixture.

6. Mix the ground mixture with the bimblis and set aside.

7. Now heat oil and let cool. Once cooled add to the above bowl of bimblis.

8. Fill in glass bottles and let it mature for a month. See that the oil level is slightly above the bimblis in the bottle.
