Simple Vegetarian Fried Rice with Coconut Oil
Ingredients
3 Cups of Basmati Rice
6 Cups of Water
2 Tbsps Ginger Garlic paste
2 Bunches of Spring Onions (10 Spring Onions finely chopped)
2 Medium sized Carrots (finely chopped into cubes)
Salt to taste
Coconut Oil as needed

Serves 5 / 45 minutes
Preparation
1. Take 3 cups of rice in a bowl, wash the rice and drain off the water.
2. Take a nice large vessel, add sufficient amount of oil. Heat the oil. Once oil is hot enough add ginger garlic paste. Sauté until the paste is cooked and leaves an aroma.
3. Now add the rice and mix well with the paste. Stir fry for about 3 minutes.
4. Add water, give it a stir. Cook on medium low fire until the water dries up.
5. Once water has dried up turn off the flame. Let the rice cool down.
6. As the rice is kept aside to cool,cut the vegetables as mentioned above.
7. Take another large vessel,add sufficient amount of oil. Heat the oil and add the finely chopped carrots and spring onions.
8. Stir fry for about 3 minutes. Then add the rice. Mix well with vegetables. Stir fry for some more minutes.
9. Serve hot.
