Mutton Masala
Ingredients
For Marination
1 Kg Mutton(Cut into Medium Sized Pieces)
1 Tsp Turmeric Powder
1 Tsp Chili Powder
1 Tsp Garam Masala
2 Tbsps Ginger Garlic Paste
Juice of 1 Lime
Salt as required
2 Tbsps Oil
For Gravy
3 Medium Sized Onions (Finely Chopped in semicircles)
2 Medium Sized Tomatoes (Finely Chopped)
2 Red Chilies
3/4 Cup Cashew Nut (Pieces)
16 Cloves
10 Green Cardamoms
20 Peppercorns
2 Bay Leaves
1 Tsp Jeera / Cumin
2 Star Anise
2 Inch Cardamom
Oil as required
Salt
3 Cups Water

2 Red Chilies
3/4 Cup Cashew Nut (Pieces)
16 Cloves
10 Green Cardamoms
20 Peppercorns
2 Bay Leaves
1 Tsp Jeera / Cumin
2 Star Anise
2 Inch Cardamom
Oil as required

Servings / Time
Serves 6 / 1 Hour
Preparation
1. Marinate the mutton with the above mentioned ingredients and set aside for an hour or two.
2. Take a pressure cooker, add sufficient amount of oil, add onions fry till onions are partially caramelized.
3. Then add two Red Chilies and tomatoes, cook till mushy. Add cashew nuts and saute for about 3 minutes. Then turn off the flame, allow to cool.
4. Now add this mixture to a mixer , grind with some water to make a thick paste.
5. Now add sufficient amount of oil to the pressure cooker, add all the above mentioned spices, saute for 3 minutes. Once the aroma sets in, add the marinated meat, mix well and saute for 5 minutes.
6. Now add the paste and mix the meat well with the paste. Add 3 cups of water. Close the pressure cooker and cook on a low - medium flame for about 2 - 3 whistles.
7. Serve hot. Garnish with some Coriander Leaves.
