Mutton Biryani
Ingredients
For Marination
750 gms Mutton (cut into medium sized pieces)
2 Tbsps Ginger Garlic Paste
1 Tsp Red Chili Powder
1 Tsp Turmeric Powder
1 Tsp Biryani / Garam Masala Powder
2 Tbsps Oil
2 Tbsps Lime Juice
1 Tsp Salt
For Gravy
2 Bay Leaves
1 Tsp Jeera / Cumin
8 Green Cardamom
2 Star Anise
4 inch Cinnamon
16 Cloves
20 Peppercorn
3 Medium Sized Onions (Cut into semicircles)
2 Medium Sized Tomatoes (Finely Chopped)
8 Tbsps Coriander Leaves (Finely Chopped)
1/2 Cup Oil
For Rice
3 Cups Rice
1 Tsp Red Chili Powder
1 Tsp Turmeric Powder
1 Tsp Biryani / Garam Masala Powder
2 Bay Leaves
4 Cloves
2 Star Anise
10 Peppercorns
6 Green Cardamom
2 inch Cinnamon
1/2 Tsp Jeera / Cumin
2 Tbsps Lime Juice
6 Cups of Water
Salt as required
Oil as required
For Garnishing
2 Medium Onions (Cut into Semicircles)
2 Medium Potatoes (Cut into Fine Strips)

For Rice
3 Cups Rice
1 Tsp Red Chili Powder
1 Tsp Turmeric Powder
1 Tsp Biryani / Garam Masala Powder
2 Bay Leaves

6 Green Cardamom
2 inch Cinnamon
1/2 Tsp Jeera / Cumin
2 Tbsps Lime Juice
6 Cups of Water
Salt as required

For Garnishing
2 Medium Onions (Cut into Semicircles)
2 Medium Potatoes (Cut into Fine Strips)
Servings / Time
6 Servings / 4 Hours Marination Time/ 1 Hour Cooking Time
Preparation
1. Marinate the mutton with all the ingredients above and keep aside for 4 hours in a refrigerator. Heat Pressure Cooker with oil. Add the spices mentioned above for the gravy.
2. Add onions, fry till brown and almost about to caramelize. Add sufficient amount of oil to avoid burning of onions.
3. Now add the tomatoes, saute till mushy.
4. Add marinated mutton, coriander leaves and saute on a low medium flame for 5 minutes.
5. Cook covered on a low medium flame until the mutton turns tender for about 2 - 3 whistles. The flame must be low or else the mutton can get hard.
6. Once ready, allow to cool. Then open the pressure cooker and set the meat aside.
7. Now for cooking the rice, wash the rice well, add sufficient amount of oil in a large vessel. Heat the oil. Add all the above mentioned spices for the rice.
8. Add the washed rice, mix well with all the above mentioned spices, saute for about 3 minutes.
9. Now add some lime juice to the rice. Add water as mentioned above and add salt such that the water is salty.
10. Cook until water has dried. Once ready keep aside to cool.
11. Take a non stick pan and prepare for the garnish, add sufficient amount of oil add onions and potatoes, fry until onions are partially caramelized and potatoes are crisp.
12. For serving, first add a layer rice, then layer of mutton with some gravy alternatively. Garnish with fried onions and potatoes. Serve hot.
