Spinach Potato Cutlets
Ingredients

20 Garlic Cloves,Finely Chopped
1 Medium Sized Onion, Finely Chopped
1 Green Chili, Deseeded and finely chopped
3 Bundles Spinach, Finely Chopped
4 - 5 Medium Sized Potatoes, Boiled and Mashed
1 Tsp Cumin Seeds
1 Tsp Turmeric Powder
1 Tbsp Coriander Leaves, Finely Chopped
Coconut Oil as per requirement
Salt as per requirement
Bread Crumbs or Flour as required

Preparation

1. Add 2 tablespoons of oil in a non stick vessel, heat the oil, once the oil is hot enough, add the cumin seeds and turmeric powder, once the seeds crackle, add finely chopped garlic. Once the garlic aroma sets in, add the chopped onions and chili, stir fry for a few minutes, then add the chopped spinach leaves. Now close the vessel with a lid. Allow to cook for a few minutes until the water oozes out from the spinach. Once spinach is soft and mushy, turn off the flame. Allow this mixture to cool.

2. Now in a bowl, add the mashed potatoes along with the above mixture of spinach. Also add some salt. Mix well.

3. Take a handful of the mashed potato mixture and make nice round balls. Flatten the balls and dip them into flour or bread crumbs on both sides and place them onto a plate. These cutlets are now to be fried.

4. Heat some oil in a pan. Once the oil is hot, add these cutlets. Fry on both the sides until golden brown.

5. Serve hot with some ketchup or some chutney.
