Mutton Kaju Masala
Ingredients
1 Kg Mutton
1 Medium Sized Onion, Finely Chopped
1 Medium Sized Tomato, Finely Chopped
1/4 Cup Coriander Leaves, Finely Chopped
2 Strands of Curry Leaves
2 Tbsps Ginger Garlic Paste
1/2 Cup Cashewnuts
3 Red Chillies, Dry, Deseeded and cut into pieces
2 Tbsps Coriander Seeds
6 Cloves
2 Tsps Poppy Seeds
2 Inches Cinnamon Sticks
1 Tsp Turmeric Powder
3 Tbsps Desiccated Coconut
Salt as needed
Oil as needed
Water as needed

Servings / Time
Serves 8 / 1 Hour
Preparation
1. Add the mutton pieces to a pressure cooker, Add water such that it is in level with the mutton pieces. Cook for about 20 minutes. Once ready, leave the meat aside.
2. Take a non stick pan and roast the onions, cinnamon sticks, turmeric powder, poppy seeds, coriander seeds, cloves, coconut, red chilies,cashew nuts, tomato and coriander leaves. Roast until a nice aroma sets in. Roast on a medium flame. Once ready allow to cool.
3. Add all the above roasted ingredients to a blender, add sufficient amount of water and salt to form a nice thick paste.
4. Now take a pressure cooker, add oil, once ho, add the curry leaves, then add ginger garlic paste. Once ready add the above blended paste and cook for about 2 minutes.
5. Finally add the mutton. Mix well. Close the lid of the pressure cooker. make sure the water added is in level with the mutton.
6. Cook for about 10 minutes. Once ready serve hot with rice or rotis.
