Potato Soya Cutlets
Ingredients
5 Medium Sized Potatoes, Boiled
10 Soya Chunks, Soaked and Boiled
3 Medium Green Chillies, Finely Chopped
2 Medium Onions, Finely Chopped
1 Tsp Cumin Seeds
1/2 Tsp Turmeric Powder
50 Cloves Garlic, Minced
1/4 Inch Ginger, Minced
Coconut Oil as required
Salt as required
Bread Crumbs or Flour as required
3 - 4 Tbsps Water
10 Soya Chunks, Soaked and Boiled

3 - 4 Tbsps Water
Servings / Time
13 Cutlets / 45 Minutes
Preparation
1. Boil potatoes and soya chunks separately. Once boiled allow to cool. Once the potatoes have cooled peel them and mash them. Add the mashed potatoes to a bowl.
2. Take a pan, add 2 tablespoons of coconut oil, add the chopped chillies, minced garlic, ginger, cumin seeds, turmeric powder and onions. Fry until onions turn translucent. Do not burn the garlic. Once ready, turn off the flame and allow to cool.
3. Now add the above saute to a blender along with the soya chunks, add very little water around 3 - 4 tablespoons. Blend well to form a nice thick paste. This paste should not be watery.
4. Now mix this above paste with the mashed potatoes. Add some salt for taste.
5. Take a handful of the mashed potato mixture and make nice round balls. Flatten the balls and dip them into flour or bread crumbs on both sides and place them onto a plate. These cutlets are now to be fried.
6. Heat some oil in a pan. Once the oil is hot add these cutlets. Fry on both the sides until golden brown.
7. Serve hot with some ketchup or some chutney.
