Lator(Jackfruit Cake with Ragi Flour)
Ingredients
1 Cup Jackfruit Pulp
1/2 Cup Uncooked Rice
1/2 Cup Ragi Flour
3/4 or 1 Cup of Grated Coconut
Coconut Oil for Greasing the Baking Tin
6.5 X 2 Inch Round Baking Tin
1 or less than a Cup of Water
A Pinch of Salt
1/2 Cup Uncooked Rice

Preparation
1. Soak the uncooked rice for 1 hour in water. Grind the rice and grated coconut in a grinder. Add water little by little so that you have a nice thick paste of rice and coconut. Separately grind the jackfruit to get the jackfruit pulp.
2. In a bowl mix the ground rice and coconut, jackfruit pulp and ragi flour to have a nice thick consistency. If you feel the batter is too thin you can add more ragi flour. It depends on how thick the jackfruit pulp is, based on the variety of the jackfruit you are using.
3. Add a pinch of salt to the batter and mix well. I have not added sugar since the jackfruit has its own natural sugars to give the sweet taste.
4. Now preheat the oven at 180 degrees celsius, grease the baking tin with coconut oil. Add the batter into the tin.
5. Place the baking tin into an oven for about 30 minutes or until the toothpick comes out clean.
6. Once ready, allow to cool and then serve thick slices.
