Brown Beans in Tomato Garlic Gravy
Ingredients
1 and 1/2 Cup of Brown Beans
2 Medium Onions, Finely Chopped
4 Medium Tomatoes, Chopped
1/2 Inch Piece Ginger, Minced
2 Green Chillies, Deseeded and Slit
1/2 Cup of Garlic Cloves
1 Tsp Turmeric Powder
1 Tbsp Cumin Seeds
Salt as per taste
5 Tbsps Coconut Oil
Water as required

10 Servings / 1 Hour Soaking Time and 40 Minutes Cooking Time
Preparation
1. Wash the beans well and soak them in boiling hot water for an hour or until the bean can be pierced through with your finger nail. The boiling water should be 1 inch above the soaked beans.
2. Once the beans have be soaked, boil the beans in a vessel using the same water, add more if needed, Also add some salt as the beans boil. Boil until soft.
3. As the beans boil, chop onions, tomatoes and chillies. Take a pan, add 3 tablespoons of coconut oil, as the oil gets hot add the chopped tomatoes, garlic, ginger, cumin seeds, turmeric powder. Saute until the tomatoes are cooked and are soft and mushy. Once ready, turn off the flame and allow to cool.
4. Now add the above to a blender to form a nice fine paste. Add Salt to this mixture when in the blender.
5. Heat a non stick vessel, add 2 tablespoons of coconut oil, once hot add the slit chillies and chopped onions. Saute until the onions turn translucent.
6. Now add the above paste to the vessel and mix well with the sauted onions and chillies. Cook with a closed lid for around 3 minutes.
7. Now add the brown beans along with its water if left or else add more water depending on the thickness of the gravy you desire.
8. Mix well and cook for another 10 minutes with an open lid, thicken the gravy if desired.
9. Serve hot with bread, rice or rotis.
