Peas Potato Red Salad
Ingredients
2 - 3 Tbsps Green Peas
2 Medium Sized Potatoes
2 Tbsps Coriander Leaves, Finely Chopped
1 Medium Sized Tomato
1 Medium Sized Onion
1 Medium Sized Apple
1 Tsp Rock Salt
Juice of 1/2 Lime
2 - 3 Tbsps Olive Oil
1/4 Cup Water
2 Medium Sized Potatoes
2 Tbsps Coriander Leaves, Finely Chopped
1 Medium Sized Tomato
1 Medium Sized Onion
1 Medium Sized Apple
1 Tsp Rock Salt
Juice of 1/2 Lime
2 - 3 Tbsps Olive Oil
1/4 Cup Water

2 Servings / 20 Minutes
Preparation
1. Peel the potatoes and chop them into medium sized cubes along with onion. Add around 1/4 cup of water to a vessel, add the cubed potatoes, onions and the green peas and allow to boil until soft or till the water has dried. Once boiled keep aside and allow to cool.
2. As the cubed potatoes, onions and green peas boil, chop the tomato and apple into medium sized cubes, chop coriander leaves fine. Add all these to a bowl along with the boiled potatoes, onions and green peas.
3. Mix all the vegetables well by adding salt, lime juice and olive oil and serve.
