Peas Potato Green Salad
Ingredients
2 - 3 Tbsps Green Peas
2 Medium Sized Potatoes
2 - 3 Tbsps Coriander Leaves, Finely Chopped
1 Medium Sized Tomato
1 Medium Sized Spring Onion
1 Tsp Rock Salt
Juice of 1/2 Lime
2 - 3 Tbsps Olive Oil
1/4 Cup Water
2 Medium Sized Potatoes
2 - 3 Tbsps Coriander Leaves, Finely Chopped
1 Medium Sized Tomato
1 Medium Sized Spring Onion
1 Tsp Rock Salt
Juice of 1/2 Lime
2 - 3 Tbsps Olive Oil
1/4 Cup Water

2 Servings / 20 Minutes
Preparation
1. Peel the potatoes and chop them into medium sized cubes. Add around 1/4 cup of water to a vessel, add the cubed potatoes and the green peas and allow to boil until soft or till the water has dried. Once boiled keep aside and allow to cool.
2. As the cubed potatoes and green peas boil, chop the tomato into medium sized cubes along with the spring onion and coriander leaves. Add all these to a bowl along with the boiled potatoes and green peas.
3. Mix all the vegetables well by adding salt, lime juice and olive oil.
4. Serve in a bowl.
