Peas Potato Egg Cheese Salad

Ingredients

2 - 3 Tbsps Green Peas
2 Medium Sized Potatoes
2 Tbsps Coriander Leaves, Finely Chopped
1 Medium Sized Tomato
1 Medium Sized Onion
1 Medium Sized Apple
2 Cubes of Cheese
2 Eggs, Boiled
2 Tbsps Fresh Cream
1 Tsp Rock Salt
Juice of 1/2 Lime
2 - 3 Tbsps Olive Oil
1 Tbsp Oregano for Seasoning
1/4 Cup Water

2 Servings / 20 Minutes

Preparation

1. Peel the potatoes and chop them into medium sized cubes along with onion. Add around 1/4 cup of water to a vessel, add the cubed potatoes, onions and the green peas and allow to boil until soft or till the water has dried. Once boiled keep aside and allow to cool.

2. Simultaneously boil 2 eggs for about 10 minutes. Allow to cool and then deshell the eggs. Cut the boiled eggs into medium sized cubes.

3. As the cubed potatoes, onions, eggs and green peas boil, chop the tomato and apple into medium sized cubes, chop coriander leaves fine. Chop the cheese into medium sized cubes. Add all these to a bowl along with the boiled potatoes, onions, eggs and green peas.

4. Mix all the vegetables well by adding salt, oregano, lime juice, fresh cream, olive oil and serve.
