Ingredients

4 Medium Sized Potatoes
4 Medium Sized Tomatoes
2 Medium Sized Onions
1/2 - 3/4 Cup Tightly Packed Coriander Leaves
4 Small Green Chilies
10 Cloves Garlic
1/4 Inch Ginger
2 Tsp Coriander Seeds
1 Tsp Cumin Seeds
2 Tbsps Vegetable Oil
Salt and Water as required

Preparation

1. Boil the potatoes unpeeled. Boil such that the potatoes are not very soft. Once boiled allow the potatoes to cool and peel the potatoes. Cut the potatoes into medium sized cubes.

2. As the potatoes are boiling, you can get the paste ready. Chop the tomatoes into medium sized cubes, dessed the green chilies. Add the cubed tomatoes, deseeded chilies, coriander leaves, garlic, ginger, coriander seeds, cumin seeds and salt in a blender to form a nice thick paste. Add little water if required.

3. Chop the onions into ringlets. Take a vessel add oil to the vessel. Heat the oil.

4. Once the oil is hot, add the onions, cook till transluscent. Then add the paste and cook till the oil oozes out from the paste. The paste should be thick enough.

5. Now add the cubed boiled potatoes. Stir fry well so that the paste blends well with the potatoes.

6. Cook for around 5 minutes. Then turn off the flame and serve hot.
