Onion Tomato Stuffed Papad
Ingredients
6 Papads (Ready to use, available in stores)
1 Medium Sized Onion, Finely Chopped
! Medium Sized Tomato, Finely Chopped
2 Tbsps Tomato Ketchup or Tamarind Chutney
1/4 Tsp Salt
1 Small Egg to smear over the papad
Oil to fry the papad
Some Toothpicks to close the edges of the papad

Preparation
1. Chop the onion and tomato very fine, add salt to the chopped onions and tomatoes, add 2 tablespoons of Tomato Ketchup or Tamarind Chutney and mix well. Keep this aside.
2. Break an egg into a small bowl, mix the egg yolk and the egg white by beating it slightly.
3. Take 6 Papads, I buy these papad packets usually and shallow fry these to be eaten as a light snack. However today I tried something different by stuffing them with a simple tomato-onion mixture.
4. Take each of these papads, take a brush, smear some egg with the brush over the papad, add 2 teaspoons of the stuffing and close the papad edges by inserting a toothpick. The papads should be thick enough for the stuffing. Also do not stuff too much as the papad can get soggy.
5. Once all the papads have been stuffed, heat a non-stick pan with some oil. Heat the oil, when the oil is hot enough, add the papads and fry them on a medium flame, fry on either side till golden yellow.
6. Once ready place them on a paper towel to remove excess oil. Take off the toothpicks carefully from each and every stuffed papad. Serve the Onion Tomato Stuffed Papad hot.
