Egg Tomato Curd Mayonnaise Salad
Egg Tomato Curd Mayonnaise Salad is a combination of curd and mayonnaise as a paste using just boiled eggs and tomato seasoned with some oregano and a dash of olive oil to increase its richness.
The combination of curd and mayonnaise forms a nice creamy thick paste. The taste is a mixture of sweet and sour, in combination with boiled eggs and tomato cubes. The boiled eggs increase the richness and creamy flavor of this salad.

Ingredients
1 Medium Sized Tomato
2 Eggs, Boiled
2 Tbsps Curd
2 Tbsps Mayonnaise
1 Tbsp Olive Oil
Salt as per requirement
Oregano for seasoning

Preparation
1. Add to eggs in a vessel with water, boil these eggs for 10 minutes. Allow to cool and remove the egg shells. Cut the eggs into cubes. Place the cut cubes into a bowl and keep the bowl aside.
2. Chop the tomato into small sized cubes. Add these cut tomato cubes into the bowl containing the cut egg cubes. Add salt and mix well.
3. Now take a separate bowl, add two tablespoons each of mayonnaise and curd. Mix well to form a nice creamy white paste. Add a tablespoon of olive oil to this paste and mix well.
4. Now add the cut egg cubes and tomato cubes to the bowl containing the creamy white paste. Mix well. Season with oregano. Serve cold with any meats or fish.
