Roast Masala (Masala for Chicken, Beef and Pork Roast)
This Masala is a simple marination for meats like chicken, beef, and pork. It is a mixture of spices such as garlic, ginger, peppercorns, cloves, cinnamon, turmeric and jeera all ground in water and lime juice. It makes a very good marination. This marination can be prepared beforehand and refrigerated and used when desired.
Ingredients
1 Bulb of Garlic
1 and 1/2 inch Ginger
8 - 10 Peppercorns
6 - 8 Cloves
2 Inch Piece Cinnamon
1 Tsp Turmeric Powder
1 Tsp Jeera or Cumin Seeds
2 Limes
1/2 Cup of Water or as per requirement
While Cooking the Meat Add the below along with the Roast Masala:
2 - 3 Broken Red Chillies
1 Onion, Chopped
1 and 1/2 inch Ginger
8 - 10 Peppercorns
6 - 8 Cloves
2 Inch Piece Cinnamon
1 Tsp Turmeric Powder
1 Tsp Jeera or Cumin Seeds
2 Limes
1/2 Cup of Water or as per requirement
While Cooking the Meat Add the below along with the Roast Masala:
2 - 3 Broken Red Chillies
1 Onion, Chopped
Servings / Time
A small bowl (for 1 Kg Meat i.e Chicken, Beef or Pork) / 15 minutes
Preparation
1. Add all the above ingredients except the red chilies and onion to a blender or mixer. Blend to form a fine paste. Add water and lime juice from 2 limes at intervals. Water should be added as per your requirement.
2. The Consistency of the paste depends upon the amount of water added. A Small bowl of paste is obtained which can be refrigerated and used to marinate chicken beef or pork.
