Chicken Roast

This Chicken Roast is a very simple dish, where the large chicken pieces are marinated using the Roast masala.

The Roast Masala is a combination of spices like ginger, garlic, cloves, cinnamon, peppercorns, jeera or cumin along with lime and water which is ground to form the masala. The Marinated Chicken pieces are then cooked in a vessel, letting the gravy dry and allowing the chicken to be roasted in the vessel itself.



Chicken Roast

Ingredients

4 Large Chicken Pieces
2 Potatoes, Cut into Slices
1 Small Onion, Sliced
Roast Masala
as per the requirement in the recipe
Salt as per requirement
Water as required

Preparation

Chicken Roast - Marination
1. Clean and wash the chicken pieces well, add salt to the chicken pieces. Marinate the chicken with Roast Masala for an hour.

2. Now take a vessel. Add the chicken pieces along with the sliced onion, add a very little amount of water around 1/4 cup.

3. Allow the chicken to cook on a medium flame. Close the lid of the vessel.

4. When the chicken is half cooked, add the potatoes, allow potatoes to boil. If water is less slightly more water can be added. Again boil the potatoes and cook the chicken with the lid closed on a medium flame.

5. Check if the chicken is cooked by poking a fork to the chicken. Once cooked, allow the gravy to dry by letting the lid open from the vessel. Once the gravy has dried, allow the chicken to roast a bit, by partially letting it burn in the vessel itself. Serve it hot along with the potatoes.
