Batica (Coconut and Semolina Cake)
Ingredients
3 Eggs
250 gms Sugar
1 Coconut, Grated(Approximately 1 Cup Tightly Packed)
63 gms Salted Butter
125 gms Semolina or Rava
1/4 Tsp Cardamom Powder
1/8 Tsp Nutmeg Powder
1/4 Tsp Baking Soda or Baking Powder
6.5 X 2 Inch Round Baking Tin
250 gms Sugar
1 Coconut, Grated(Approximately 1 Cup Tightly Packed)
63 gms Salted Butter
125 gms Semolina or Rava
1/4 Tsp Cardamom Powder
1/8 Tsp Nutmeg Powder
1/4 Tsp Baking Soda or Baking Powder
6.5 X 2 Inch Round Baking Tin
Servings / Time
10 People / 1 Hour
Preparation
1. Beat Sugar and Eggs in a bowl to get a nice creamy mixture. Grind coconut fine in a mixer or a blender.
2. Add the ground coconut to the creamy mixture of eggs and sugar. Mix well.
3. Now add the rava or semolina to the above mixture and mix well.
4. Finally, add the melted butter along with cardamom and nutmeg powder. Mix well.
5. Keep the batter covered aside with a closed lid overnight.
6. On the next day, add the baking soda or baking powder, mix well. Preheat the oven at 180 degrees centigrade.
7. Line the baking tin with baking paper and pour the batter. Cover the top of the tin with a lid so that the top does not burn
8. Bake for 30 minutes or until the toothpick comes out clean when inserted in the center. Brown the top layer by baking for another 10 minutes by taking off the top lid.
9. Remove from the oven and allow the cake to cool. Serve by cutting nice thick slices.
