Banana Jaggery Coconut Pancakes (Filos)
Ingredients
1 Cup Wheat Flour
2 Overripe Bananas
1/2 Cup Milk
1/2 Cup Crushed Jaggery and Grated Coconut Mixture
A Pinch of Salt
2 Eggs
Oil for Frying

Preparation
1. Mash the overripe bananas in a bowl.
2. Now add wheat flour, milk, crushed jaggery and coconut mixture, salt and eggs and milk well to form a nice thick mixture.
3. Heat oil in a large pan. Once hot, add the mixture with a big cooking spoon one at a time little by little such that you have four pancakes frying at one time on the pan.
4. Flip the pancakes on either side until golden brown. When both the sides are fried well, take the pancakes off and add them to a serving plate.
5. Relish and enjoy this delicious Goan pancakes also called "Filos" with a rich flavor of banana, jaggery, and coconut.
Ideal to have for breakfast or tea time. There is no need to add sugar as the jaggery does the wonders.
So also with a fruit like banana present gives you the energy and the boost to start your day if you do plan to have these for breakfast.
