Xacuti Masala

Ingredients

8 Red Kashmiri Chilies, Stalks taken off
250 gms Coconut, Scrapped
1 Tsp Cloves
1 Tsp Turmeric or Haldi Powder
10 Peppercorns
1 Tsp Jeera or Cumin Seeds
7 Garlic Cloves
1/2 inch Ginger
2 inch Cinnamon
1 Tbsp Khus Khus (Poppy Seeds)
1 Tbsp Coriander Seeds
1 Medium Sized Onion, Chopped
1 Nutmeg, Powdered
1 Star Anise
Salt to taste
Water as per requirement

Servings / Time

For 1 Kg of any Meats (Chicken, Mutton or Beef), Makes a medium sized full bowl of the masala / 30 minutes

Preparation

Xacuti Masala - The Ingredients
1. Take a medium sized dry pan, heat it and add all the ingredients listed above excluding the water. Roast the above ingredients till the coconut turns a nice brown color or till you have a nice aroma. Allow the roasted dry mixture to cool.

2. Now add all the above ingredients to a blender along with a little water around 1/4 or 1/2 cup. Blend to form a nice smooth paste. Add more water if required to grind a nice fine paste.

3. This makes for a full medium sized bowl of xacuti masala. This masala can be used to cook 1 Kg of any meat like chicken, mutton or beef. See recipe for chicken xacuti.

Xacuti Masala - Roasting the Ingredients
4. This masala can be refrigerated, it needs to be consumed soon in a few days time.

This Masala is mostly used to cook recipes like Chicken Xacuti, Beef Xacuti and Mutton Xacuti.

The flavor of coconut is very much predominant in  this recipe. The more the coconut, better is the masala.
