Lime Oatmeal Cake
Ingredients
1 Cup Milk
1/3 Cup Oil
1/4 Cup Lime Juice (Approximately 3 Medium Sized Limes)
3 Eggs
1/2 Cup Sugar
2 Tablespoons Honey
Rind (scrapped outer skin) of 2 Limes
1 Cup Wheat Flour
1 Cup Cooking Oats
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
9 x 2 inch round Cake Tin
1/3 Cup Oil
1/4 Cup Lime Juice (Approximately 3 Medium Sized Limes)
3 Eggs
1/2 Cup Sugar
2 Tablespoons Honey
Rind (scrapped outer skin) of 2 Limes
1 Cup Wheat Flour
1 Cup Cooking Oats
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
9 x 2 inch round Cake Tin

8 Servings / 1 Hour
Preparation
1. Add 1 Cup of Wheat Flour, 1 Cup of Cooking Oats, 1 Teaspoon Baking Powder, and 1/2 Teaspoon Baking Soda in a bowl. Mix thoroughly well.
2. Take another bowl, break 3 eggs, add 1/2 cup of sugar and beat the eggs to form a nice creamy mixture. Now add this creamy mixture to a large bowl along with 1 cup of milk, also add 1/3 cup of oil, 1/4 cup lime juice and 2 tablespoons of honey along with the rind of 2 limes. Mix this well.
3. Gently fold in the dry mixture into the wet mixture to form a nice smooth thick batter.
4. Grease a 9 x 2 inch round Cake Tin with butter, Add the above batter to the greased round cake tin. Cover the top of the cake tin with an aluminum lid.
5. Preheat the oven to 180 degrees centigrade, then add the cake tin into the oven, bake for around 40 - 50 minutes.
6. Once ready allow the cake to cool, and slowly take it off from the tin and add it onto a plate by scraping off the sides with a knife and overturning the tin and gently letting the cake come off onto the plate. Cut into pieces and serve.
