Chocolate Coffee Mousse with Honey Glazed Banana and Raisins topping

Ingredients

250 ml Fresh Cream
100 gms Chocolate Bar
3 tbsp Instant Coffee
3 tsp Unflavored Gelatin
1/4 Cup Water at Room Temperature
1/4 Cup Boiling Water
1/4 Cup Sugar
2 Eggs

For the Topping
1 Banana, Cut into Round Slices
20 - 30 Raisins
1 - 2 tbsps Honey
1 - 2 tbsp Breadcrumbs

Preparation

1. Melt the chocolate bar in a microwave oven for 3 minutes or use the double boiler method. Now add the cream to a bowl along with the melted chocolate and mix well using an electric mixer on a medium speed. Please note you may add around 1/4 cup of sugar along with the cream at this stage, I have not added the sugar since the chocolate bar already contained sugar. Break two eggs and beat them in a separate bowl until it forms stiff peaks. Now add the beaten eggs to the mixture of cream and chocolate and mix well using the mixer.

2. In a small cup or a small bowl, mix coffee granules, gelatin, and water at room temperature, until well blended. add boiling water and stir until the gelatin is completely dissolved. Cool to a room temperature.

3. Now gently stir in the coffee mixture into the bowl of chocolate, cream, and eggs. Refrigerate until set.

4. For the topping, cut a banana into slices, add the slices to the serving bowl around the rim of the bowl along with some raisins and drop some honey over the bananas and raisins. Sprinkle with breadcrumbs. Serve Chilled.
