Carrot - Mayonnaise Paste

Ingredients

8 Medium Sized Carrots
12 - 15 Tablespoons of Mayonnaise
1/4 Cup Water or more as per your requirement
1/2 - 1 Teaspoon Salt
4 - 5 Tablespoons of Oregano
1 Teaspoon Pepper Powder

A Medium Sized Bowl / 30 minutes

Preparation

1. Peel off the skins from the carrots, scrap the carrots into small pieces and add the scrapped carrots to the blender.

2. Also add salt and water as per your requirement to get a nice fine smooth paste.

3. Add this paste of carrot to a bowl, also add 12 - 15 Tablespoons of Mayonnaise, 4 - 5 Tablespoons of Oregano and 1 Teaspoon Pepper Powder.

Now mix thoroughly well to get a nice smooth paste of Carrot and Mayonnaise. This paste can be used in sandwiches as and when desired. You just need to refrigerate the paste.

4. I have used this paste to make a ribbon sandwich along with Coconut Coriander Chutney.

This gives a nice tricolor to the sandwich. The recipe of the sandwich will be coming up shortly in my next post.
