Tomato Onion Bhaji
Ingredients
3 Medium Sized Ripe Tomatoes, finely chopped
2 Medium Sized Onions, Cut into Ringlets
2 Green Chilies, Slit with seeds removed
4 Cloves Garlic, finely chopped
1/2 Tsp Garam Masala
1/2 Tsp Turmeric Powder
1/4 Tsp Red Chili Powder
1/4 Tsp Honey or Sugar
1/2 Tsp Mustard Seeds
1/2 Tsp Cumin Seeds or Jeera
3 Leaves of Vauchi Bhaji (Malabar Spinach) or Spinach or Coriander leaves, finely chopped
2 Strands Curry Leaves, Separate the leaves from the stock
3/4 Cup Water
2 - 3 Tbsp Oil
Salt to taste

5 Persons / 30 minutes
Preparation
1. Heat oil in a vessel, add onion, chilies, spinach or coriander and garlic.
2. Once onion is translucent, add tomatoes and allow to cook until the tomatoes get soft.
3. Some of the tomatoes can also be smashed. Now add water and allow the onions and tomatoes to cook further.
4. Add red chili powder, turmeric, garam masala, honey and salt to the above.
5. Heat some oil in a separate pan, add mustard seeds, cumin seeds and curry leaves.
6. Once the mustard seeds crackle put off the flame.
7. Add this to the mixture of onions and tomatoes and cook for 1 or 2 minutes.
8. Serve hot with bread or pao.
