Stuffed Prawns Karela (Bitter Gourd)
Ingredients
4 Medium Sized Karelas or Bitter Gourds
(I have used one big Karela which I have cut into two parts and two medium sized Karelas).
Prawns Recheado Masala Fry as the stuffing or filling.
1/2 Cup Water
2 - 3 Tbsps Oil
Salt as per your requirement.

Preparation
1. Wash the bitter gourds or the karelas nicely. Peel off the outer green skin off the bitter gourds or the karelas. Make an incision or an opening or slit it on one side right from the top up to the bottom of the Karela or Bitter Gourd. Take off the seeds.
2. Take a vessel, add the bitter gourds or the karelas into the vessels along with half a cup of water, Add salt as per your requirement, and boil till bitter gourds or the karelas get partially boiled or parboiled.
The salt added to the water helps to reduce the bitterness of bitter gourds or the karelas. Once boiled, drain the extra water if present and allow the bitter gourds or the karelas to cool.
3. Keep the filling or stuffing ready, The recipe for the stuffing can be found here - https://recyipee.blogspot.in/2017/10/prawns-recheado-masala-fry.html. These stuffing measurements mentioned in the above recipe are more than enough for the four bitter gourds or the karelas.
4. Now add the above stuffing into the opening of the bitter gourds or the karelas. Fill bitter gourds or the karelas well. Close the openings or seal the openings using toothpicks so that the stuffing does not spill off on frying.
5. Now take a pan, heat 2 - 3 Tablespoons of Oil, once hot add the stuffed bitter gourds or the karelas on to the pan, fry till golden brown. Fry on both sides.
6. Serve hot with rice or rotis. It has a mixed taste of bitter sour and spicy.
