Lime Sponge Cake

Ingredients

150 gms Wheat Flour
1/2 Tbsp Baking Powder
70 gms Sugar
75 gms Butter
1/2 Cup Milk
5 Eggs
2 Lime
9 x 2 inch round Cake Tin

Preparation

1. Add the 75 gms of butter and 1/2 cup of milk to a bowl, add the bowl to the microwave for around 2 minutes, so that the butter melts and the milk warm, or you could also melt the butter and warm the milk using a gas stove.

2. Break 5 eggs, separate the egg yolks from the egg whites in two bowls.

3. Add 70 gms sugar to the bowl of the egg whites and beat well to form stiff peaks.

4. Separately beat the egg yolks.

5. In a separate bowl, mix 150 gms of wheat flour with 1/2 tablespoon of baking powder.

6. Now fold in the above mixture of flour and baking powder into the bowl of melted butter and milk, little by little, alternatively add the egg white stiff peaks and egg yolks.

7. The final mixture should be a nice smooth paste, see that there are no lumps formed.

8. Now take the limes, wash the limes well, scrap the outer skin of each lime very fine, and sprinkle it with the above mixture of eggs, wheat flour, baking powder, and sugar. Mix well.

9. Also, squeeze the juice of the limes using a lime squeezer, add the juice to the above mixture of eggs, wheat flour, baking powder, and sugar and Mix well.

The lime gives a wonderful flavor to the cake. Just try it out. It also smells good on baking.

10. Finally, grease a round aluminum tin with butter, add the above mixture of the cake onto the greased tin.

Cover the round tin with an aluminum foil so that the top of the mixture is not burnt.

11. Preheat the oven at 180 degrees centigrade for 10 minutes, then add the aluminum tin with the cake mixture, bake for 30 - 35 minutes. Once ready poke a toothpick into the baked cake, if the toothpick comes out clean the cake is baked well and ready to eat.

12. Once ready allow the cake to cool, and slowly take it off from the tin and add it onto a plate by scrapping off the sides with a knife and overturning the tin and gently letting the cake come off onto the plate. Cut into pieces and serve.
