Coconut Curry Leaves Chutney (Idli Chutney)

Ingredients

1 Cup Coconut, Grated
1 Inch of Ginger, finely chopped
2 Green Chilies, Slit and Remove off the seeds
30 - 40 Curry Leaves
2 - 3 Tablespoons of Oil
Salt as per your requirement
1/2 - 3/4 cup of Water based on your requirement
1/2 Slice of Lime (Optional)
1 Teaspoon Honey (Optional)

Coconut Curry Leaves Chutney (Idli Chutney)

A Small Bowl / 30 minutes

Preparation

1. Grate a coconut fine, take around 1 cup of the grated coconut and add it to a blender.

2. Chop the ginger into fine pieces, slit the green chilies, so as to remove the seeds from the inside, after deseeding the chilies chop the chilies fine. Now add the chopped ginger and chili to the blender containing the grated coconut.

3. Wash the curry leaves thoroughly well, dry the curry leaves. Add some oil in a small pan and heat the oil, once hot add the curry leaves. Fry till the curry leaves crackle. Let it cool for a while, then add the warm mixture of curry leaves and oil to the blender along with water as per your requirement, salt as per your requirement, 1 teaspoon of honey (optional) and 1/2 Slice of Lime Juice(Optional).

4. Blend to form a nice smooth paste of Coconut Curry Leaves Chutney or Idli Chutney. Serve with idlis.
