Vegetable Cutlets
Ingredients
6 Medium Carrots
3 Potatoes
1 Medium sized Onion
1 Teaspoon Turmeric
1/2 Teaspoon Pepper
1 Teaspoon Garam Masala
1 Tablespoon Ginger - Garlic Paste
1 Tablespoon Oil
Breadcrumbs
Salt as per taste

For 4 people in 1 hour
Preparation
1. Boil the carrots and potatoes (any other vegetables can be used) unpeeled until soft, Once boiled let it cool, once cooled, mash the vegetables into a paste. Chop the onion into small cubes.
2. Heat the pan, add oil, add the chopped onion, ginger-garlic paste, turmeric and garam masala as per the above measurement, Fry till onion turns translucent. Let the mixture cool.
3. Add the above mixture to the mashed vegetables. Mix all this well by adding pepper and salt as required.
4. Make round balls and flatten, dip these into breadcrumbs.
5. Heat the pan, add oil, once the oil has been heated, add the cutlets, fry till golden brown.
6. Serve hot with chutney, ketchup or a dip. Can be also eaten with bread or rotis.
