Soya Chunks Cutlets
Ingredients
16 Soya Chunks
4 Vauchi Bhaji (Malabar Spinach) Leaves, Cut Fine
1 Egg
2 - 3 Tbsp Oil
Salt to Taste
Ginger Garlic Paste or Spicy, Sweet and Sour Garlic Paste
Water as required

6 Cutlets / 40 minutes
Preparation
1. Soak the Soya Chunks in water for an hour.
2. Boil the chunks along with the green leaves. Once the water has become completely less or has dried, add the ginger garlic paste or Spicy, Sweet and Sour Garlic Paste and stir fry the chunks and the finely cut green leaves for a few minutes.
3. Now allow the above to cool, add the above to the blender along with some salt.
4. A nice fine paste is formed. Add an egg to this mixture and mix well.
5. Heat a pan with oil. Add the mixture little by little using a large spoon.
6. The mixture should be added like a pancake mixture onto the pan, smear nicely on the pan to form small cutlets.
7. See that both the sides have been fried. Turn to the sides very delicately. Serve hot with a dip or sauce.
