Green Leafy Vegetable Pancake
Ingredients
1 and a half cup of Wheat Flour
2 - 3 cups Water
10 Malabar Spinach Leaves (Vauchi Bhaji)
1 Tablespoon Ginger Garlic paste
1 Onion
2 - 4 Tablespoons of Oil
1/2 Teaspoon Salt
2 Eggs
2 - 3 cups Water

4 persons (15 Pancakes) / 45 minutes
Preparation
1. Cut the green leafy vegetable and onions fine. Heat oil in a pan, add the onions, green leafy vegetable, and ginger garlic paste. Fry till the mixture is soft.
2. In a bowl take 1 and a half cup wheat flour, eggs, salt, water and the above mixture of onions and green leafy vegetables, mix this thoroughly well so that no lumps are formed. The mixture should be like a thin batter.
3. Now heat oil in a pan, add the batter little by little using a larger spoon so as to form small pancakes.
4. Serve hot with chutney, ketchup or a dip. Can be also eaten with bread or rotis.
