Caldo Verde
Ingredients
2 Big Potatoes
30 Green Leaves of Vauchi Bhaji (Malabar Spinach)
1 Medium Sized Onion
20 pods of Garlic
1 Teaspoon Salt
2 - 3 Tablespoons of Olive Oil
4 Cups of Water

Time / Servings
45 minutes / 3 Persons
Preparation
1. Wash the leaves thoroughly well then cut the Leaves into strips. Boil the Leaves till soft. Then allow to cool.
2. Boil the potatoes separately un-skinned till soft. Once soft, turn off the flame and allow to cool and then peel the skin off.
3. Add the boiled leaves and boiled potatoes to the blender to form a nice thick paste.
4. Mince the garlic and cut the onions fine.
5. Take a vessel, add olive oil and add garlic and onions. Saute the garlic and onions for a few minutes till you have a nice aroma. Once this mixture of garlic and onions is soft enough, add the mixture of the potatoes and Malabar spinach leaves.
6. Add some water and cook for around 15 minutes or more till ready. Once done, pour some more olive oil or garnish with fresh cream.
7. Serve hot in soup bowls.
