Carrot Mousse

Carrot as a vegetable is known for its own kind of sweetness, therefore we use carrots in making different kinds of desserts. One of my personal favorite dessert with carrots is the Carrot Halwa. But this time I thought of trying something different with carrots, so I tried the Carrot Mousse, this is a different kind of mousse consisting of grated carrots, fresh cream, gelatin, eggs, and butter. This mousse is creamy with grated carrots and sweetened with honey. I have not used sugar in the carrot mousse but instead a dash of honey, so this dessert can be enjoyed by one and all even the diabetics.

The dessert as seen in the picture is a pale yellow color with strands of orange carrots and is set using gelatin and decorated with slices of the kiwi fruit. Decorations can be done by the fruits of your choice so that is optional :)

Carrot Mousse

Ingredients

3 Medium Sized Carrots
200 ml Fresh Cream
2 Eggs
1 and 1/2 Tsp Gelatin
2 Tbsp Butter
1 Tbsp Cold Water
2 Tbsp Hot Water
4 - 5 Tbsp Honey
1/2 Cup Water
1 Kiwi Fruit

Preparation

Carrot Mousse
1. Peel the carrots, grate the carrots fine.

2. Take a vessel, add butter and heat on low flame such that the butter melts.

3. Now add the grated carrots to the vessel with the melted butter. Mix the grated carrots well with the butter.

4. Add 1/2 cup of water to the vessel with the grated carrots and allow the carrots to cook for 15 - 20 minutes till they become tender. Cook on a medium flame.

5. Allow the mixture to cool.

6. Sprinkle some gelatin in a cup with a Tablespoon of cold water, allow to stand for a minute. Then add 2 Tablespoons of hot boiling water and dissolve the gelatin on stirring.

7. Break the two eggs, Separate the egg yolks from the egg whites in two separate bowls.

8. Add the egg yolks and the gelatin to the grated carrot mixture and mix well so that the gelatin blends into the mixture.

9. Beat the egg whites until they have formed stiff peaks. Simultaneously whip the cream in a separate bowl.

10. Now fold the cream and the egg whites into the grated carrot mixture. Mix well and add honey to the mixture. Add this to small dessert bowls or into a large bowl and allow to chill for 2 to 3 Hours. Serve nice and cold topped with slices of kiwi.
